Farmer Dave's Artichokes
<< Go Back2-10 young artichokes
1 tbsp. butter
2-4 cloves garlic
1-3 tsp. soy sauce
1-2 tbsp. honey
Sesame seeds to garnish
Cut the tip and very base of artichoke and peel off the side few leaves. Cut in half from top to bottom. Melt butter in a fry pan over medium high heat. Add garlic, swish around and add artichokes cut side down. Cover with lid until light browning begins.
Add 1/4 to 1/3 cup of water and cover. Cook until water is evaporated and artichokes are slightly tender. Artichokes will begin to brown; add soy sauce and honey. Swirl pan as mixture caramelizes and soaks up into the hearts.
When liquid is reduced tip artichokes out onto serving dish and sprinkle with sesame seeds.
Pop the whole hearts in your mouth and enjoy.

Farmer Dave's Artichokes
We grow 1000 artichoke plants every year and harvest them in May/June and again in late summer and fall. We pick the artichokes when they are young so they aren't feathery inside. The key to this recipe is using fresh young artichokes with tight heads. Once the artichokes get too large the feathers start to grow inside and you can’t pop the whole artichoke in your mouth. You can simply trim a young artichoke, cut the hearts in half and enjoy.

In the winter sliced ham, big red, mizuna, thinly sliced leeks, cheese, mayo and stone ground mustard. In the summer, cream cheese, lemon cucumber, tomato, lettuce and basil.
